Good Afternoon Everyone,
The image above shows Chef Ceci preparing chicken to go into a fire pit to slow cook. Here in Pachuca it is called Barbacoa. Which is a certain way to prepare any kind of meat. As you may see the chicken is split in half and seasoned on the inside topped with sliced cactus and some other herbs. It is then dressed with a adobo sauce and salt. After we seasoned it up it is then wrapped in banana leaves and aluminum foil. Once it is wrapped it is then placed in a fire pit built underground to smoke, this allows the meat to become very tender and juicy. This whole experience has been very delightful especially since I went to culinary school and have been in the kitchen environment for a small portion of my young life. I want to thank Mr. & Mrs. Kakos for providing me with the scholarship. It allowed me to experience something outside of my normal day to day life. Although we have a few days left on our trip, I can truly say that so far this trip has been eye opening in terms of the Mexican Culture and Cuisine.
Last but certainly not least. Here is an image of some art work that is in La Salle Pachuca. It was created by their own students. It is supposed to show the life of student. How the student's start college journey and how it usually ends. As we all know starting college is never easy because there are so many options to chose from in terms of which major to choose from. To the amount of hard work and dedication it takes to actually finish. This art work is supposed to show all of these experiences as a college students from start to end. I really enjoy viewing this because it gives me motivation to continue through the hard times as a students because the outcome is worth it. Once you gain that diploma no one can take it away from you. You will be able to take that with you forever.
